Whole Grains To-Go
Makes 40 servings (120 small balls or 30 bars)
Serving Size: 3 balls
Ingredients
- 6 cups old-fashioned rolled oats
- 1/2 cup chopped pecans, almonds, or walnuts
- 1/4 teaspoon ground cinnamon
- 3/4 cup water
- 4 tablespoons honey
- 3/4 cup low-fat chunky peanut butter
- 3/4 cup dried fruit (raisins, cranberries, blueberries, cherries, etc.)
Directions
- In a large bowl, stir together the oats, nuts, and cinnamon.
- Add the water and honey and stir to combine thoroughly.
- Add peanut butter and dried fruit and stir to combine thoroughly.
- Using damp hands, shape mixture into bars or small balls for a quick snack to-go.
Peanut Butter Fruit Dreamwiches
Makes 1 serving
Serving Size: 1 sandwich
Ingredients
- 2 pieces whole-wheat bread
- 1 tablespoon creamy peanut butter
- 1 tablespoon low-fat ricotta cheese
- 1/4 apple
- 1 tablespoon honey
Directions
- Wash hands and surfaces.
- Wash apple and cut into thin slices.
- Spread peanut butter on one piece of bread.
- Spread ricotta cheese on the other piece of bread.
- Place apple slices on one piece of bread and drizzle with honey.
- Put both slices of bread together and enjoy!
- Refrigerate leftovers immediately.
Ants on a Log
Makes 1 serving
Serving Size: 2 logs
Ingredients
- 1 celery stalk
- 2 tablespoons peanut butter
- 1 tablespoon raisins
Directions
- Wash hands and surfaces.
- Clean celery stalk and cut into two sticks.
- Fill celery with peanut butter (1 tablespoon on each stick).
- Place raisins on top of peanut butter for ants (1/2 tablespoon on each stick).
Shake Your Pudding
Makes 1 serving
Ingredients
- 1/2 cup cold fat-free milk
- 2 tablespoons dry instant chocolate pudding
NOTE: Other flavors can be used.
Directions
- Wash hands and surfaces.
- Measure milk into a measuring cup and pour into a small plastic container with a tight fitting lid.
- Add instant pudding. Snap on lid and shake for 30 seconds.
- Pudding will set up after a few minutes.
- Refrigerate leftovers immediately.
Tasty Tots
Makes 6 servings
Serving Size: 6 tots
Ingredients
- 5 cups sweet potatoes, peeled and coarsely shredded
- 2 1/2 cups canned low-sodium garbanzo beans (chickpeas) with liquid
- 1/2 cup green onions, finely chopped
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cinnamon
Directions
- Preheat oven to 350°F.
- Place shredded potatoes on a large baking pan sprayed with a nonstick cooking spray. Bake for 20 minutes or until slightly tender. Do not overcook. Remove from oven.
- In a blender or food processor, blend the garbanzo beans and liquid until smooth.
- In a medium mixing bowl, mix all the ingredients together. Cover and refrigerate for 40-45 minutes to make tots easier to form.
- Preheat oven to 400°F.
- Spray a large baking pan with nonstick cooking spray. Using a cookie scoop or a spoon, roll 36 tots. Place 1 inch apart on baking sheet. Lightly flatten the top of the tots with a spoon or a fork. Bake for 10-12 minutes or until lightly brown. Serve hot.
