Trail Mix
Ingredients
- Whole-wheat or corn square cereal
- Oat O-shaped cereal
- Pretzels
- Small animal-shaped cookies
- Raisins
NOTE: Other cereals and dried fruits could be used for this trail mix.
Directions
- Wash hands and surfaces.
- Put some of each food in a small bowl.
- Take one spoonful from each bowl and place in a baggie.
- Shake the baggie to mix.
Veggie Mix
Makes 2 servings
Ingredients
- 1 carrot
- 1 potato
- 2 tablespoons water
- 1/2 teaspoon margarine
- 1 teaspoon brown sugar
Directions
- Wash hands and surfaces.
- Scrub or peel carrot and cut into slices.
- Scrub or peel potatoes and cut into slices.
- Place vegetables in saucepan and add water.
- Cover and cook vegetables on medium heat for 10-15 minutes until tender.
- Pour vegetables into a colander to drain.
- Pour into bowl and toss with margarine and brown sugar.
- Refrigerate leftovers immediately.
Food Group Funny Face
Makes 1 serving
Serving Size: 1 cracker
Ingredients
- 1 square graham cracker
- 1 tablespoon peanut butter
- 3 or 4 raisins
- 1 tablespoon shredded low-fat cheddar cheese
- 2 large green peas
- 1 grape
Directions
- Wash hands and surfaces.
- Spread peanut butter on cracker.
- Sprinkle grated cheese at top of cracker for hair.
- Place raisins on cracker for mouth.
- Use peas for eyes and grape for nose.
- Refrigerate leftovers immediately.
Yogurt Pops
Makes 2 servings
Serving Size: 1 yogurt pop
Ingredients
- 1 (8-ounce) cartons of low-fat yogurt, any flavor
- 1/4 cup of orange juice
- 1 tablespoon honey
Directions
- Stir the following ingredients together in a bowl:
- 1 carton yogurt
- 1/4 cup orange juice
- 1 tablespoon honey
- Pour the mixture into the paper cups and put in freezer for one hour.
- After one hour when they have begun to freeze, stick a pop stick in the center of each cup and return to freezer for 3 more hours.
- When they are ready to eat, just peel off the paper of the cup and enjoy!
Waldorf Salad
Makes 4 servings
Ingredients
- 1 cup celery, diced
- 2 apples, chopped
- 1/4 cup walnuts, chopped
- 1/2 cup raisins
- 1/2 cup nonfat vanilla yogurt
- 1 teaspoon lemon juice
- 1 teaspoon sugar
Directions
- Combine celery, apple, walnuts, and raisins in a large mixing bowl.
- In a smaller bowl, combine yogurt with lemon juice and sugar.
- Add the yogurt mixture to the fruit mixture.
- Mix until coated.
- Refrigerate until ready to serve.
